Dragon Fruit Salad



Alas, Fall is right around the corner. Summer is my all time favorite season so I'm hanging on to every last minute of summer that I can. And Making the most of Blueberry Season!!

This is a super simple recipe, healthy, tasty and a great snack for after school, at work, or whenever. I like to tote mine around in a tupperware and also make this for road trips or use it instead of jelly for a healthy PB and J.

Full of super food goodness with all of the berries and a bit of olive oil this dish is loaded with health benefits, and the kids will love it too!



Serves: 6-8 Prep Time: 10 Minutes Cook Time: 0

Ingredients:

1 C of organic blueberries

1 Cup of organic blackberries

1 Cup of Organic Raspberries

1 Dragon Fruit

Cara/Cara Orange/Vanilla White Balsamic Vinegar

Persian Lime Infused Olive Oil



Directions:

1. Wash all berries well and place into a large bowl or tupperware container.

2. Half the Dragon Fruit and scoop out the flesh of the meat in little balls or chunks. Add to the bowl with the berries.

3. Add a Tablespoon of Cara-Cara Orange/ Vanilla White Balsamic Vinegar and a Tablespoon of the Persian Lime Infused Olive Oil. Or to Taste.

4. Mix well and enjoy!
